Description

How to make tender garlic butter steak tips with cheesy rigatoni that delivers restaurant-quality comfort in your own kitchen every single time.

Ingredients

Scale

Steak Tips

  • 2 lbs sirloin steak tips, cut into 1-inch pieces
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp olive oil

Garlic Butter Sauce

  • 6 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, chopped

Cheesy Rigatoni

  • 1 lb rigatoni pasta
  • 1 cup heavy cream
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp red pepper flakes
  • Salt to taste

Instructions

  1. Season Steak: Pat steak tips completely dry with paper towels, then season generously with salt and pepper. Let sit for 10 minutes at room temperature to ensure even cooking.
  2. Cook Pasta: Bring large pot of salted water to boil. Cook rigatoni according to package directions until al dente. Reserve 1 cup pasta water before draining.
  3. Sear Steak: Heat olive oil in large skillet over medium-high heat. Sear steak tips for 2-3 minutes per side until golden brown. Don’t overcrowd the pan.
  4. Make Sauce: Reduce heat to medium, add butter and garlic to pan. Cook 30 seconds until fragrant, then add wine, thyme, and rosemary. Simmer 2 minutes.
  5. Create Cheese: In separate saucepan, heat cream over medium heat. Gradually whisk in Parmesan and mozzarella until smooth. Add pasta water if needed for consistency.
  6. Combine Everything: Toss hot pasta with cheese sauce, then top with steak tips and garlic butter. Garnish with parsley and red pepper flakes before serving immediately.

Notes

  • Don’t overcrowd the pan when searing steak tips or they’ll steam instead of developing a proper crust.
  • Reserve pasta water before draining – the starch helps bind the cheese sauce perfectly.
  • Freshly grated cheese melts much better than pre-shredded varieties with anti-caking agents.
  • Let steak tips rest briefly after cooking to redistribute juices for maximum tenderness.
  • Serve immediately while hot – this dish loses its appeal when it sits too long.
  • Adjust red pepper flakes to your family’s heat tolerance preferences.
