Ingredients
Scale
Steak Tips
- 2 lbs sirloin steak tips, cut into 1-inch pieces
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 tbsp olive oil
Garlic Butter Sauce
- 6 tbsp unsalted butter
- 6 cloves garlic, minced
- 1/4 cup dry white wine
- 2 tbsp fresh thyme leaves
- 1 tbsp fresh rosemary, chopped
Cheesy Rigatoni
- 1 lb rigatoni pasta
- 1 cup heavy cream
- 1 1/2 cups freshly grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh parsley, chopped
- 1/4 tsp red pepper flakes
- Salt to taste
Instructions
- Season Steak: Pat steak tips completely dry with paper towels, then season generously with salt and pepper. Let sit for 10 minutes at room temperature to ensure even cooking.
- Cook Pasta: Bring large pot of salted water to boil. Cook rigatoni according to package directions until al dente. Reserve 1 cup pasta water before draining.
- Sear Steak: Heat olive oil in large skillet over medium-high heat. Sear steak tips for 2-3 minutes per side until golden brown. Don’t overcrowd the pan.
- Make Sauce: Reduce heat to medium, add butter and garlic to pan. Cook 30 seconds until fragrant, then add wine, thyme, and rosemary. Simmer 2 minutes.
- Create Cheese: In separate saucepan, heat cream over medium heat. Gradually whisk in Parmesan and mozzarella until smooth. Add pasta water if needed for consistency.
- Combine Everything: Toss hot pasta with cheese sauce, then top with steak tips and garlic butter. Garnish with parsley and red pepper flakes before serving immediately.
Notes
- Don’t overcrowd the pan when searing steak tips or they’ll steam instead of developing a proper crust.
- Reserve pasta water before draining – the starch helps bind the cheese sauce perfectly.
- Freshly grated cheese melts much better than pre-shredded varieties with anti-caking agents.
- Let steak tips rest briefly after cooking to redistribute juices for maximum tenderness.
- Serve immediately while hot – this dish loses its appeal when it sits too long.
- Adjust red pepper flakes to your family’s heat tolerance preferences.
