Instructions
- Cook Pasta: Bring a large pot of salted water to boil and cook penne according to package directions until al dente. Reserve 1 cup pasta water before draining completely.
- Season Chicken: Season chicken pieces with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat until shimmering and fragrant.
- Cook Chicken: Add chicken to hot skillet and cook 5-6 minutes until golden brown and cooked through. Remove chicken to a plate and set aside temporarily.
- Build Sauce: In same skillet, add butter and garlic, cooking 30 seconds until aromatic. Whisk in flour, then slowly add wine, broth, and cream while whisking constantly.
- Add Cheese: Bring sauce to gentle simmer, then remove from heat. Add mozzarella and Parmesan, stirring until melted and creamy. Season with salt and pepper to taste.
- Combine Everything: Return chicken to skillet along with drained pasta. Toss everything together, adding pasta water as needed for perfect consistency. Garnish with basil and tomatoes.
